This is just a general thing I love to witness any kid doing: When kids are very excited and can't even deal with it, they often splay their fingers and clench their open hands in a sort of maniacal jazz-hands expression of unadulterated joy. It's usually accompanied with a wide-open mouth and bulging eyes.
It's a gesture that only children make. Even if adults do something similar, it's never with the same petrified verge-of-exploding intensity with which kids do it, and it slays me every single time I see kids do it.
