This is one of my favorite easy one-pan meals: A can of butter beans, baby portobello mushrooms, spinach, onion, a bit of crumbled bacon, a sprinkle of parmesan cheese, some vegetable or chicken stock, a splash of cream, smoked paprika, pepper, and salt.

I use whatever kinds of beans I've got, whatever kind of mushrooms I've got, whatever kind of greens I've got, and whatever kind of cheese I've got, lol. I just adjust the spices depending on what I have on hand. So, for example, if I have red or black beans, I might use cumin and red pepper instead of smoked paprika.

It's easy to do vegetarian, and it's easy to switch out the bacon for, say, chicken.

This is a great end-of-the-grocery-cycle meal for me, because I always tend to have the basic ingredients laying around, waiting to be used somehow!
