This doesn't photograph especially well, but it's so delicious and so easy: Turkey, bean, and spinach stew.

It's just ground turkey, cannellini beans, fresh spinach, chicken broth, a splash of cream, and whatever spices you like! Dinner in one pot and 15 minutes.

(Cooking Note: Brown the turkey first, then add the other ingredients and let them all simmer together.)

And of course it's super easy to substitute a vegetarian protein for the turkey and substitute or add different veggies. I sometimes add onion or use kale instead of spinach, or a combination of the two, etc.

If you want a spice suggestion, I made this last night with garlic powder, smoked paprika, cumin, red pepper, black pepper, and salt.
